  • 1 cup red bell pepper, chopped
  • 3 cups black beans, cooked
  • 1 1/2 cups corn
  • 1 cup red onion, chopped
  • 4 cloves garlic, chopped
  • 1/2 cup cilantro, chopped (fresh)
  • 1 jalapeno, minced
  • 1/2 cup lemon juice
  • 1/4 teaspoon white pepper
  • Blend all of the salad ingredients together well. Chill before serving.
