Cranberry Muffins

  • 1 cup cranberries
  • 2 1/4 cups sugar, separated
  • 1 3/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 cup allspice
  • 1/4 cup egg substitute
  • 1/4 teaspoon orange peel
  • 3/4 cup orange juice
  • 1/3 cup unsweetened applesauce
  • Nonstick cooking spray

Coarsely chop cranberries. Toss with 1/4 cup sugar; set aside. In mixing bowl, combine flour 1/4 cup sugar, baking powder, cinnamon and allspice. Combine egg substitute, orange peel, orange juice and applesauce; add to dry ingredients, stirring just until moistened (batter will be lumpy). Gently fold in cranberry mixture. Fill muffin tins sprayed with nonstick spray 2/3 full. Bake at 400 degrees for 20-25 minutes until golden brown.
