Light Eggnog

Serving size: 10 1/2 cups

  • 1 quart skim or 1% low-fat milk
  • 1 cup fat-free egg substitute
  • 1/4 cup sugar
  • 1/2 cup fat-free instant vanilla pudding mix
  • 2-3 teaspoons vanilla extract
  • 1/2 teaspoon ground nutmeg

Place all of the ingredients in a blender. Blend for 30-60 seconds or until smooth.

Chill for several hours.

Shake or stir well. Serve in glasses or mugs.
