1 cup white whole wheat flour
3⁄4 cup oat flour
2⁄3 cup granulated sugar
21⁄2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon ground ginger
1⁄2 teaspoon ground allspice
1⁄2 teaspoon salt
2 large eggs
3⁄4 cup 1% low fat milk
1⁄4 cup canola oil
1 teaspoon vanilla extract
11⁄2 cups diced ripe plums
1⁄2 cup pistachios, toasted and chopped (or your favorite nut)
Preheat oven to 350 degrees F. Spray a nonstick 9 × 5-inch loaf pan with nonstick cooking spray.
Whisk the dry ingredients together (flour through salt) in a medium size bowl.
In a large bowl, whisk together eggs, milk, oil, and vanilla until well combined. Add plums and pistachios and stir to combine. Add the dry mixture to the liquid mixture in small increments, mixing lightly after each addition. Do not overmix or you will have tough bread. Pour mixture into the prepared pan.
Bake the loaf until golden brown and a toothpick inserted in the center comes out clean, about 60 to 70 minutes. Let cool in the pan for 10 minutes. Run a knife around the edges, then turn the loaf out onto a wire rack and place on its side. Let cool for 1 to 2 hours before cutting. Makes 10 slices (slightly less than 1-inch per slice).
